Hemp Burgers

Found this tasty recipe on the back of the bag of Bob's Red Mill Hulled Hemp Seeds.

Easy recipe to pull together for a healthy dinner.  Includes only a handful of ingredients and not too much preparation. 



Hemp Burgers (adapted from a Bob's Red Mill Recipe.)

1/2 lb tofu (Your preference of type: extra-firm, firm, silken.)
1/2 c hulled hemp seeds
1/8 c raw shelled sunflower seeds
2 green onions, chopped
1 TB soy sauce (I prefer Bragg Liquid Aminos.)
1 TB nutritional yeast flakes
1/2 tsp dried basil OR 1 TB fresh chopped basil
1-1/2 c rolled oats (Original recipe used stuffing.)
Liquid: veggie broth or water.  If burgers seem a bit dry when processing or forming into patties, add some liquid.  About 1/4 c at a time.
Oil for cooking
Rolls or pita bread
Toppings:
ketchup
mustard (I used Dijon.)
vegan mayonnaise (Such as Vegenaise.)
greens
sliced tomatoes
sliced red onion




Drain 1/2 lb tofu from package.  Place into food processor and lightly blend.  Add remaining ingredients except for oats and blend until smooth.  Add oats and pulse to incorporate oats into mixture.

Remove mixture from processor and form into 4-6 equal-sized burgers.

Heat non-stick skillet over medium.  Add oil and burgers to heated skillet.  Cook about 5 minutes per side, until lightly browned and crisp.

Serve with selection of toppings,  a large tossed salad, and fries!


Variation: You can make these using about one cup of beans (garbanzo, white, black, etc.) instead of the tofu.

WhatMyKidsAte:  They nibbled on the burgers, which I placed in mini whole-wheat pita pockets.  I also served carrot sticks - my son dipped in hummus and my daughter dipped in Vegenaise.  Of course the fries were finished quickly!
