Chocolate Quick Bread/Cake

oh my goodness! It has been too long since I blogged, life's pace is definitely picking up! Despite the craziness of life, I have still found time to bake, I made this cake yesterday after a particularly hectic day at work, and it turned out lovely. Decadent and chocolaty, all those work stresses went right out the window! It's topped with fluffy frosting and mounds of marshmallows and I finished it off by grating dark chocolate over the marshmallows. I actually poured half the batter into the pan, sprinkled on a layer of marshmallows, and topped it with the rest of the batter. I don't recommend this, it really didn't make any difference in the cake, the marshmallows just melted and got sticky. Cake was still good (really good) but a bit sticky around the edges. If you make it, just leave them out, as I did in the recipe below. Next time I make it I'm going to throw a few handfuls of chocolate chips in for an even more intense chocolate flavor. For the frosting use canned or homemade whichever you prefer. I used homemade buttercream leftover from some cupcakes I made for valentines day. I had saved the extra in February by freezing it, all I had to do was thaw it and rewhip it, no problem!
Chocolate Quick BreadRecipe from Thatsmyhome.com2 1/2 cups flour1 1/2 teaspoon baking soda1/2 cup cocoa1 cup sugar1/2 teaspoon salt1 egg, beaten1/3 cup butter, melted1 1/4 cups sour milk*ToppingFrostingMarshmallowsChocolate shavings
*Sour milk: add 1 tbsp. vinegar to 1 cup milk at room temp. Allow to sit 5 minutes.Preheat oven to 350° F. Spray a 9x5 loaf pan with nonstick spray and set aside. Sift together first five ingredients. Add remaining ingredients. Combine until just blended. Pour into sprayed 9 x 5 loaf pan. Bake at for about one hour or until a pick inserted in the middle comes out with just a few crumbs attached. Remove from oven, allow to cool completely. When cooled, remove from pan. Frost with buttercream or other frosting and top with plenty of marshmallows and a sprinkle of chocolate shavings.

S'Mores Granola Bars

Granola bars are my favorite grab and go snack and you really can't get any easier than this recipe. I love the Quaker Chewy S'mores Granola Bars, so I tweaked the recipe to be as s'mores like as possible. I used Kraft mini marshmallows, they taste like the marshmallows in Lucky Charms, or the kind that come in those little packets of hot cocoa, so they were perfect for these bars. The finished product was quite similar to the Quaker bars, but a bit chewier and more chocolaty tasting. Definitely a keeper. 
No bake S'mores Granola BarsAdapted From laurenslatest.com1/4 cup butter
1/4 cup honey
1/3 cup packed brown sugar
2 cups quick cooking oats {not rolled oats!}
1 cup crispy rice cereal
1/2 teaspoon vanilla
1/4 cup mini chocolate chips, plus more for topping
1/2 cup mini marshmallows, plus more for toppingMix together Rice Krispies, oats, 1/2 cup marshmallows, and mini chocolate chips (if you want them with less chocolate flavor, leave out the chips till the end). Set aside. In a small pot, melt butter, honey, and brown sugar together over medium high heat until it starts to bubble. Reduce heat and cook for another two minutes. Stir in the vanilla. Remove from heat and pour over oat/rice mixture. Mix well ensuring that all ingredients are moistened. Line a small jelly roll pan (12x8x1) with aluminum foil.  Pour mixture into lined pan. Pack it in really tightly or the bars won't set and will fall apart when cooled.  Sprinkle the top with more chocolate chips and mini marshmallows. Let cool, then cut into bars. Have a sweet day!

I thought today I'd take a bit of time to share with you some resources to help you learn more about the Paleo and Primal lifestyles. I enjoy these sites not only for their educational value, but also because many of them share fabulous recipes!



Paleo Parents - one of my favorite blogs and favorite Paleo families. Stacy and Matthew are inspirational. They've lost a combined weight of over 200 pounds and now are a Paleo family with their children eating Paleo food as well. They've recently published the cookbook Eat Like a Dinosaur. Their blog is filled with inspirational articles, recipes, and a great overview of the Paleo lifestyle.



The Foodie & The Family - Tara writes about the Paleo/Primal lifestyle and has great recipes. Like us, she's part of a homebirthing, extended breastfeeding, kinda crunchy family.



The Paleo Mom - this is another fabulous blog that focuses on the entire family, including kids, eating a Paleo diet. It has great recipes, information about the Paleo diet, and is just a fun read.



nom nom paleo - great overview of Paleo diet, fabulous food pictures, and recipes. I also appreciate that the entire family follows a Paleo diet.


Civilized Caveman Cooking Creations - amazing recipes and Paleo diet information.



Paleo Friggin Delish - another great blog for Paleo recipes.



Modern Paleo - Paleo recipes, fitness, etc.



Paleolista - Nell Stephenson shares recipes and additional health information on her blog. She's also a consultant and sells nutritional plans.



Cave Girl Eats - Liz writes about a lot of different topics on her blog - food prep, crossfit, real food, paleo/primal/nourishing traditions type eating, and great recipes.


RobbWolf.com - Robb Wolf shares lots of information about the Paleo lifestyle on his site as well info on weight loss, and health benefits of a Paleo diet. He's the author of The Paleo Solution and several other books and also offers individual consulting.


Ancestralize Me! - Laura writes about fitness, the Paleo diet, and includes recipes!



Primal Kitchen - like the name indicates this blog features recipes fit for the Primal lifestyle. I love the focus on the family from this blog.


Primal Toad - Primal recipes, fitness articles, and also information about meet-ups.


Mark's Daily Apple - Mark Sisson is one of the top Primal writers. He's the author of The Primal Blueprint and several other books. He also has a business selling nutritional supplements.



The Food Lover's Primal Palate - Lots of great recipes and information about the Paleo diet.


Against All Grain - features wonderful recipes that are grain-free and free of refined sugars. Folks who follow a Paleo lifestyle might need to make a few modifications to the recipes



The Spunky Coconut - another great source for recipes. features gluten-free, casein-free, sugar-free recipes. Not all of the recipes are grain-free and some modifications need to be made for folks following a Paleo lifestyle.

life rearranged
 I had a perfectly lovely Mother's Day. Mom came down to visit and we enjoyed a simple weekend with yummy dinners on our freshly cleaned patio. and we fired up the fire pit! S'more time!!! These were my Mother's Day prezzie! Aren't they fabulous?! Handpainted TOM's are quite possibly the world's most perfect Mother's Day gift. A few crocheted washcloths I made for my mom. Happy colors for her kitchen! My mom and I at church on Mother's Day. I love her oodles.I ran at the park this week. I am so close to being done with C25K! 28 minute runs this week which for me is just over 2 miles. Next week is my last week! Upon finishing, I'll be running for 30 minutes. Theoretically that's supposed to be 3 miles, but since I rock a 13 minute mile, I'll have more training to do to get me there. I have NEVER in my life been a runner so this is a big fat huge deal for me! I'm pretty pumped! Between the running and the super clean eating, I should be back to my Weight Watchers goal weight soon-ish! 11 lbs to go...Yummy strawberry and goat cheese salad I made for the Strawberry Social on Tuesday! Our ladies bible study takes a break over summer so we always end with a big potluck we call the Strawberry Social. Everyone brings something strawberry and it's so fun! Some people bring chicken so we have a little protein...! Our first tomato of the season! Tiny, but yay for homegrown food!Have you tried these yet? SO GOOD people.
