My new year starts with a guest post for Suman.When Suman(Arthy ) @ Sumanarthy's Kitchen asked me to do a guest post for her,I was a bit busy then with Christmas preparations at home.But she was kind enough to give me enough time to send her a recipe. Suman has been an important part of my space since 2 months and we had joined hands in blogging then.The best part of her space is that she has a vast collection of recipes ranging from the simple ones to the complex ones.She has also brought out many wonderful bloggers as her guest in her space and this time,I got a chance too.All Thanks to you,Arthy.


So,friends as always I say-Love to share my happiness with a sweet/dessert and so today's recipe is a simple coffee pudding that I prepared for Christmas lunch.It's a simple yet smooth pudding that you would love to have anytime & can be prepared without much efforts.My kids loved it a lot,do give this a try if you are looking for a quick fix dessert for  any occasions.And check out the detailed recipe @ Sumanarthy's kitchen  !!


S'Mores Granola Bars

Granola bars are my favorite grab and go snack and you really can't get any easier than this recipe. I love the Quaker Chewy S'mores Granola Bars, so I tweaked the recipe to be as s'mores like as possible. I used Kraft mini marshmallows, they taste like the marshmallows in Lucky Charms, or the kind that come in those little packets of hot cocoa, so they were perfect for these bars. The finished product was quite similar to the Quaker bars, but a bit chewier and more chocolaty tasting. Definitely a keeper. 
No bake S'mores Granola BarsAdapted From laurenslatest.com1/4 cup butter
1/4 cup honey
1/3 cup packed brown sugar
2 cups quick cooking oats {not rolled oats!}
1 cup crispy rice cereal
1/2 teaspoon vanilla
1/4 cup mini chocolate chips, plus more for topping
1/2 cup mini marshmallows, plus more for toppingMix together Rice Krispies, oats, 1/2 cup marshmallows, and mini chocolate chips (if you want them with less chocolate flavor, leave out the chips till the end). Set aside. In a small pot, melt butter, honey, and brown sugar together over medium high heat until it starts to bubble. Reduce heat and cook for another two minutes. Stir in the vanilla. Remove from heat and pour over oat/rice mixture. Mix well ensuring that all ingredients are moistened. Line a small jelly roll pan (12x8x1) with aluminum foil.  Pour mixture into lined pan. Pack it in really tightly or the bars won't set and will fall apart when cooled.  Sprinkle the top with more chocolate chips and mini marshmallows. Let cool, then cut into bars. Have a sweet day! 

{Christmas Treats and DIY Parchment bags}

Hi friends! I hope you've had a fabulous Christmasy type week! I've been making lots of gifts and treats and today I'm sharing what I'm giving to our neighbors!
I went with SUPER easy treats this year! My motto is always "simple food tastes the best".
Fist up...
Christmas Crackers:1 box/bag oyster crackers1 packet dry ranch dressing mix1/4 cup canola oil1/2 tsp garlic powder
Preheat oven to 250. Mix together ranch, oil, & garlic powder. Add crackers to ranch mixture and toss evenly with wooden spoon to coat. Line cookie sheet with foil {I hate washing cookie sheets} spread crackers evenly onto sheet. Bake for 15 stirring every 5.
Seriously people. These are AMAZING. I'm not actually sure how much the neighbors will get if I don't back away from the bowl.
OK, next is the easiest fudge in the world. Three ingredients. You ready?
3 Ingredient Fudge:3 cups chocolate chips1 can sweetened condensed milk2 tsp vanilla
Melt the chocolate chips and condensed milk together until smooth. Remove from heat and stir in the vanilla. Pour in to parchment lined 8" square pan. Let sit for 4 hours or until cooled completely. Remove from pan. Peel off parchment and cut into pretty little squares.
Alright now for the treat bags. I had originally intended on buying little clear bags at Target, but they were out so I had to get crafty and make some little parchment bags.
 I don't know about you, but I think those are a million times cuter than what I could have bought at Target!
Parchment Bag Instructions:Take your roll of parchment and cut a 6" piece from the roll. Fold the bottom up but leave a 3 inch portion as your flap. Sew down each side with a 1/4" seam. Fold flap down and adhere with some fancy washi tape! So simple and cute!
Each bag will hold about a cup of crackers or 6 pieces of fudge.

Diet Soup for Weight Loss

Let’s start the year off with a diet soupthat might just help you stick with those resolutions.  This diet vegetable soup is something I liketo call my Mediterranean weight loss miracle. I put this diet veggie soup together a few years back to help maintainmy goal weight range throughout the year. I find myself eating this low fat, low calorie high fiber soup at leastonce a month.  It does wonders to help mebalance out the other treats I showed you how to make this past year.  Mixed in with all the deliciously healthylunch and dinner options covered on the blog, I also did recipes and videos foralmost 50 desserts this past year.  Andeven though I tried to use strategies to lighten up some of the recipes theywere still desserts so whenever I found myself indulging in too many treats, Imade some vegetable soup to get back on track. The strategy I use to maintain my weight is to eat smaller portions ofthe foods I love.  Then I monitor myweight daily and whenever I see my weight creep up towards the high end of myweight range make this soup to help me knock off the pounds fast.  All the chopping can be a little laborintensive but it’s also therapeutic.  Allthe monotonous veggie chopping helps me get into the mindset of investing time inmyself.  Once I have a pot of soupfinished I eat 2-3 bowls a day for 3-5 days. For dinner I usually eat 4-6 ounces of lean protein like chicken or fishwith pan sautéed non-starchy vegetables or a salad and those extra poundsdisappear.      

DietVegetable Soup for Weight LossPreptime: 30 min Cooktime: 1 hour
Ingredients
  • 1large eggplant, cut into bite sized pieces
  • 1large zucchini, cut into bite sized pieces
  • 2large onions, cut into smaller pieces
  • 2green peppers, cut into smaller pieces
  • 4stalks celery, chopped
  • 1pint of grape tomatoes
  • 1/3of a head of cabbage chopped into bite sized pieces
  • 3cups of crushed tomatoes
  • 3tbsp cider vinegar
  • 3tbsp olive oil
  • 5tsp gluten free vegetable bouillon
  • crushedred pepper
  • thyme
  • saltand pepper to taste

Instructions
  1. Preheatthe oven to 400°F (or 205°C).
  2. Line 3 baking sheets with foil spayed with olive oil spray setaside. You’ll also need a 6-8 quart pot filled with 8 cups of water set aside. 
  3. Dividethe veggies into 3 groups according to how long they each need to be roasted.  In the first group combine the eggplant andzucchini with 1/3 the crushed tomatoes, 1/3 of the chopped onions, 1 tbsp ofolive oil, red pepper flakes, salt pepper and thyme to taste then spread theveggies out onto the prepared baking sheet and roast  for 30 minutes.
  4. Inthe second group combine the peppers, celery, and 1/3 the onions, 1/3 thecrushed tomatoes, 1 tbsp of olive oil and all the same seasonings as before androast for 25 minutes.
  5. Andin the last group I combine the cabbage, grape tomatoes, and the remainingcrushed tomatoes and onions with the same seasonings as the other 2 pans androast for 20 minutes. 
  6. Add all of the finished roastedveggies to the pot of water then add the bouillon, vinegar and salt and pepperto taste and bring the soup up to a boil. Reduce the heat to low and simmer for 30 minutes.   Garnishwith fresh parsley or scallions and serve.

Happy New Year! 2013! Can you believe it?!I fell asleep last night right after 10:30pm, I tried to stay awake, I really did, but when you are growing another human being in your body you tend to get tired pretty fast. So, needless to say I woke up after the midnight hour to go to the bathroom. Wonderful way to ring in the new year :) right?!But then for a split second, I thought about sneaking another bite of these scrumptious treats. I didn't know what to call them at first because they have a little bit of everything wonderful. They are kinda like cake, but then kinda like brownies, so I am sticking with blondies just to be different. If you are a peanut butter and banana fan, then you have to try this combo. Of course I subbed in the sunbutter to make them nut-free, but some creamy peanut butter would also work wonderfully. Or maybe you are a peanut butter and chocolate fan? These will hit the spot too! A little bit of wonderful in every bite. Minus refined sugar of course.
I have been craving chocolate and sweets with this pregnancy more than with my first....does this mean  it's possibly a girl? I dunno, but something (or somebody) has hyjacked my sweet tooth and made it sassy and tenacious. Of course I don't know if you could call my refined-sugar-free sweet tooth, really a sweet tooth, but still...it's sweet to me, and calories no difference.
That is one thing this new year's that has been interesting. I am not going to start any "new resolution" in my diet or try any crazy raw smoothie thing for the new year. I am pregnant, and that's my job right now, but I am sticking to that resolve if you want to call it that. I do want to try and drink more water, drink nutritous teas and eat more greens. But don't we all. And, the nice part is that I can even find great joy in making and eating a special treat like this one....even after the holidays :)
But, don't like me change your mind about trying new and exciting adventures in the kitchen this new year. Maybe you want to try a vegan diet, or maybe you want to eliminate something you know has been giving you troubles (dairy, eggs, nuts or whatever). I give you my full and honest support in whatever ventures you find yourself in. My only thing is that you have to do it for you. Don't go on a skinny diet because you think that is what the people around you want to see from you. Don't start working on that six-pack because you think that will bring you to some new level of enlightenment. Just do what fits for you. And, stick with it, for you. Care for yourself and make that a resolution. Think about it as starting a new habit instead of accomplishing a goal. Think about it being a part of the person you are becoming on a journey instead of some fad thing you want to try out.

Well, that's my soap box speech for the day. Take it or leave it. Or call it crazy pregnancy hormones. That's my excuse at least for these amazingly satisfying treats. I hope you have a happy new year and many blessings in 2013!
Sunbutter Banana Chocolate Chip Blondie Recipe
1/4 cup of applesauce (I used homemade)
1/4 cup of local honey
1/4 cup of coconut sugar
1/4 cup of melted organic coconut oil
1 cup of mashed ripe bananas (I used 3 medium)
1 fresh egg (or chia or flax egg replacement- 1 TB ground seeds with 3 TB water whisked)
1 TB of pure vanilla
1/3 cup of sweet sorghum flour
1/3 cup of millet flour
1/3 cup of tapioca flour
1/2 ts. of baking powder
1/2 ts. of baking soda
1/2 ts. of sea salt
1/2 cup of sunflower seed butter*
1/3-1/2 cup of chocolate chips (dark, dairy free is what I prefer)

Ingredient Notes:
*If you want to make this a grain-free recipe, you can sub all of the flours for 1 cup of a almond or other nut flour.

*I used sunflower seed butter because I wanted to avoid nuts, but you can sub the sunbutter for your favorite nut butter. I think peanut or almond butter would also be delicious. 
In a large mixing bowl, add the sweeteners, oil and egg. Whisk well together and then add the flours and dry ingredients. Lastly mix in the sunbutter thoroughly, then add half the chocolate chips to the batter. Use coconut oil to grease a 8x8 pyrex pan and then pour the batter into the pan, spread even and then sprinkle the remaining chips. Bake in a preheated 350 degree oven for 30 minutes and make sure to check with a toothpick to make sure the middle is cooked and not gooey. Let them sit for at least 10-15 minutes before cutting into. This recipe will make 16 bars in a 8x8 pan.

Drumstick Curry (Kerala style) | Muringakka Thengarachu Curry

Winters are real hard time to get over in the mornings especially when you feel to just wrap in the comforters or quilts.Schools are opening tomorrow after a 10 days fun time and our late night sleeps,late early morning wake ups are also ending,feeling sad..anyway got to get to the tight schedule from  tomorrow.Anyways,coming back to the post,its Kerala style Drumstick curry.This is a very easy delicious curry that goes perfect with rice.I have tried this recipe from Jisha's Kitchen,Thanx Jisha for the recipe.Do give this a try & enjoy with rice!!!



Ingredients
drumsticks cut 10-12 pieces
onion 1 medium sized sliced
tomato 2 chopped
green chillies 5-6 vertical slit
turmeric powder 1/4 tsp
salt

to grind
coconut 1 cup grated/shredded
shallots 3-4
fennel powder 1/4 tsp
cumin seeds 1/4 tsp(optional)
turmeric powder 1/4 tsp\
garlic cloves 2

to temper 
mustard seeds 1/2 tsp
red dry chillies 2-3
curry leaves 1 sprig


Method
Heat oil in a pan and splutter mustard seeds.Add the curry leaves,followed by broken red dry chillies. Add the sliced onions and saute till translucent and lightly browned.Add in the chopped tomatoes and cook till its done.Add the drumsticks,green chillies,salt and turmeric powder.Add 1 1/2 cups water and cook covered for 13-15 minutes or until the drumsticks are cooked and tender.
In the mean time,grind the coconut,cumin seeds,fennel seeds,turmeric powder,shallots and garlic cloves.Make a smooth paste.Add this to the curry and cook on low flame for 5 mins (or till one or 2 boils appear on the surface).
Put off flame and serve warm with rice !!



Servings 2-3 adults

NOTES
* You can use fresh or frozen drum sticks.

Mexican Wedding Cookies

Since we are well into theholiday season I thought I’d show a cookie that always makes its way to myholiday cookie tray.  They’re MexicanWedding Cookies and they’re really easy to make.  They also go by quite a few other names andthe recipes vary a little from kitchen to kitchen.  Some people call them Russian tea cakes,they’re also called nut balls or snowballs or Vienna cookies and the list goeson and on.  Some recipes use finelychopped pecans, some use almonds, but the most prevalent variety seems to be walnuts.  That also happens to be the way my mom used tomake them so naturally I use the walnuts to keep her tradition alive.  But I do like to add my own little twist tothe recipe with an almost imperceptible hint of both cinnamon and orange to addan even warmer holiday feel to these melt in your cookies. When you see howeasy these are I think they’ll become a part of your holiday tradition too.

MexicanWedding CookiesPreptime: 15 min Baketime: 12 min
Ingredients 
  • 1 cup butter, softened
  • ½ cup sugar
  • ¼ tsp vanilla
  • 1 egg & 1 yolk
  • 2 ½ cups gluten freeBisquick
  • 1 cup of finely choppedwalnuts
  • ¼ tsp cinnamon, optional
  • 1 tsp orange zest (orthe zest of ½ an orange),optional
  • 1 cup of confectioner’ssugar

Instructions 
  1. Preheatthe oven to 375°F (or 190°C)
  2. Using either a stand mixer or handmixer beat together the butter, sugar and the vanilla until well combined then addboth the egg and yolk and beat for another 2-3 minutes until light andfluffy. 
  3. Stir together the gluten free Biquick,walnuts, cinnamon and orange zest then add the dry ingredients to the buttermixture and mix until the dough is combined and holds together well.
  4. Transfer the dough to a smaller bowl, coverand chill for 10-15 minutes then roll the dough into balls just under an inchin diameter and bake them for 10-12 minutes or until bottoms of cookies juststart to get a hint of color.
  5. Cool for 3-5 min on the baking sheetthen roll the warm cookies in the confectioner’s sugar and place on wire racksto cool completely. I like to store them in a covered container with sheets ofwaxed paper between them.
  6. The cookies are best served at roomtemperature so be sure to take them out of the fridge a few hours beforeserving so they have that melt in your mouth consistency.
