High arsenic levels found in organic foods, baby formula (I nursed both my kids the moment they were born, but did introduce forumla around six months - and then did a combination of breastfeeding and formula bottles until they were 9-11 months.  It's interesting, only a few years ago organic formulas were not widespread and widely available, so I used conventional formula.  The arsenic comes from the soil and into the brown rice.  Brown rice syrup is a sweetener used in a lot of organic products, including baby formula (however I just read it is not allowed in FDA-approved baby formulas???).  Just one of these things to be aware of.  Dr. Oz has been a part of this story, as he was with arsenic in apple juice.)

Dr. Oz's Transformation Nation (Sign up, take a health quiz - be honest with your answers.  Out of 5 stars, I earned 3. "Fairly Healthy" I was labeled.  Shocking, right?  Well, not really.  Bottom line - I don't exercise and I am not highly motivated to get up and move.  My husband also works long hours and I am the full-time caretaker of my preschool-age children = not a lot of ME time.  But, even as I write that, it seems like a horrible excuse to not exerciese.  My other health-related surprise - I have high blood pressure and I take medication to keep it controlled.  Totally shocking, right?  I also suffer from migraines.  I am very hormonal and I believe I suffer from the HBP and migraines due to my hormones, which both started with pregnancies and childbirth.  My children were induced due to preeclampsia - thank goodness they were both full-term.  However, ever since my pregnancie I have had high blood pressure and terrible bi-monthly headaches.  I am forever grateful for my BP and migraine meds, because honestly, they have saved my sanity.  If you suffer from migraines, you know they are severly debilitating.  I am on a quest to work on ME this year, now that my children are older that is getting easier day-by-day...but such a work-in-progress.)

No-Bake Chocolate Peanut Butter Oatmeal Cookies

The above chocolates were all from my husband for Valentine's Day.  Let me step back a moment to February 14.  He came home with a bouquet of flowers and a box of dark chocolates from Gertrude Hawk.  The second I saw that box, I knew they had milk products in them and felt so sad to tell him.  But, I wanted him to know.  He was frustrated because I have told him that dark chocolate does not have milk products - well, now he knows how hard it is to keep up with ingredient lists!  Anyway, he returned the Gertrude Hawk chocolate and surprised me with quite a selection.  (*The red hearts were from my in laws, but pretty so I had to include them.  Those are from Lake Champlain Chocolates.)



And now for my recipe...
These bring back memories of my early baking days in my parent's kitchen.  I have no idea how old I was when I made these, and I think I only made them once.  But I remember the moment of making them and think that is pretty cool.  My son helped me make these...

I power-packed these so I wouldn't feel as guilty eating them.

No-Bake Chocolate Peanut Butter Oatmeal Cookies

1 c cane sugar (The below photographed brand, Florida Crystals, is vegan-certified.)
4 TB unsweetened baker's cocoa
1/2 stick vegan butter (Earth Balance Buttery Sticks)
1/4 c unsweetened non-dairy milk (So Delicious Unsweetened)
1/2 c natural peanut butter
1/2 TB vanilla
1-1/2 c oatmeal
1 heaping TB each:
  • hempseeds
  • ground flaxseeds
  • unsweetened coconut flakes
  • wheat germ
  • dry quinoa
  • oatbran



In a saucepan combine sugar, cocoa, butter and milk.  Bring to a boil and let boil for one minute, stirring constantly.

Add peanut butter, vanilla, oatmeal, and remaining dry ingredients.  Combine well.

Drop mix by spoonful (I used 1 TB-size) on wax paper and place in refrigerator or freezer.  Allow to harden, at least one hour.  Keep chilled.

These didn't last long in our house... but not because of my husband or kids (hmmm...)!

How fun are they?  Parenting never has its dull moments.  No matter what age your children, there is always something going on - the good, the bad, and the ugly.
At this moment I am in need to recharge and set my focus on my family.  So, I am taking a break from blogging.  I do this every few months.  I am in need to have a messy kitchen and a messy dinner plate, spur-of-the-moment dinner-planning (no photos, please!), and most important...relaxed fun with my kids.  Basically, I need to "chill out."

Wow!  What a break I have had!  When I posted several weeks ago about taking a break from my blog I kinda left something out.  Sure, I was honest that I wanted to make impromptu and messy dinners without the worry of them looking photogenic.  I was also ready to "chill out" and relax with my family.  What I failed to mention was... well, I'll let my photos do the talking...

Why hello there warm hot weather, swimming pools, beaches, sundresses and pedicures (on very pale feet.  Who cares...we were in FLORIDA!).

Fun bike ride for 4!  We got the kids bowls of ice cream while my husband and I pedaled around.
Red Sox fans vacationing on the west coast of Florida... you bet we made a trip to Spring Training.Beautiful new stadium.  It's a replica of Fenway.
This is simply the best way to get around these Florida developments.

Scariest walk in my life!!!  I swear we were walking through crocodile alley!  This was between a parking lot and a (really nice!) hotel where we had a cocktail.  I was so freaked out!!!  We not only had to walk through swampy woods, but also over an area of water.  I think my husband still has my fingernail marks in his arm!

Just about to board, but there is time for... Silly faces... along with a gigantic lollipop (and still wearing his pajama top.  Pick your battles, right?).  My son had this lollipop the entire day which saved the day, if you know what I mean ;)
Ahhh... Fabulous vacation.  I'm curly-haired, tanned (sort of), and I've got my Starbucks iced soy latte.

Happy Mother's Day!  Every Mother's Day I look back at the pictures of my children on the days they were born.  The days that forever changed my life and gave me the honorable title, "Mom."

This year will be different than last year.  I get a weekend off from the kitchen!  Of course I love being in the kitchen, but I definitely don't mind a time-out.  We'll be having a family brunch at my parent's Country Club - Ooh, la, la!
