Tofu Noodle Lettuce Cups

Tofu Noodle Lettuce Cups (adapted from a Jamie Oliver recipe in Parenting Magazine.)

1 pkg (10-14 oz) extra-firm tofu
3 tsp soy sauce, divided
1 TB sesame seeds
1 TB honey (or maple syrup)
1 bundle (about 1-3/4 oz) dried fine Chinese rice noodles OR Udon OR capellini pasta
1 bag Slaw mix (I used Asian Slaw - napa cabbage, carrots, and celery.)
1/2 seedless cucumber, quarted lengthwise and thinly sliced
1/2 red bell pepper, diced
1 c diced mango (I buy frozen, cubed mango.  Give it enough time to thaw.)
2 scallions, finely sliced
1/3 c fresh cilantro, chopped
Juice 1 lime
1 avocado, peeled and diced
1 head Bibb or Boston lettuce

Prepare the tofu.  I used a brand of tofu that is vacuum-packed.  It is essentially pressed tofu so all you need to do is remove it from the package and cut into desired shape.  I cut mine into thick matchsticks.
If you use tofu that is packaged in water, drain and remove tofu.  Place tofu between thick paper or kitchen towels.  Put wrapped tofu on plate and put heavy objects on top - funny, but that's what you do!  I usually use a glass mixing bowl or some cooking pots.  Let press for about half an hour.  Remove from towels and cut into desired shape.

In large bowl, whisk together soy sauce, sesame seeds and honey.  Add cut tofu and mix gently.  Let marinate for at least 30 minutes.


Preheat oven to 400 degrees F.

Place marinated tofu on lightly oiled baking pan and place in heated oven for about 10 minutes.  Remove from oven, flip and return for additional 10 minutes.  You may want to go an additional 10 minutes to reach desired color and crispness.

Meanwhile, cook the noodles according to package directions and drain well.  You may also want to rinse them with cold water.



Toss prepared veggies (not lettuce), slaw mix, cold noodles, and cilantro with lime juice and 1 tsp soy sauce.


Peel whole leaves off the lettuce head, wash and spin dry.

Scoop noodle mixture into lettuce cups and serve along with prepared tofu.  Have fun - make sure you have plenty of napkins!

WhatMyKidsAte:  They ate the tofu and kind of picked at the noodle mixture, mainly the noodles.  The lettuce cups were too messy for them :)
