Happy First Royal Anniversary (and a recipe for delicious scones!)

Last year, my children and I sat glued to the television for hours watching and absorbing the beautiful wedding of Prince William and Kate Middleton.  It was a spectacular event and I am pleased to read from the tabloids that the royal couple are happily enjoying married life. 

In honor of their first anniversary, I am sharing my scone recipe.  Raise a mimosa and scone in celebration!

 Oatmeal Raisin (Walnut and Chocolate Chip) Scones (Adapted from Savvy Vegetarian.)

2/3 c non-dairy unsweetened milk (I used Almond.)
2 TB fresh lemon juice
2/3 c raisins
1-1/2 c whole-wheat pastry flour
1/4 c spelt flour
1/2 tsp salt
1 TB baking powder
1 tsp baking soda
1/2 c Earth Balance buttery spread, keep cold
1 c oats
4 TB raw sugar
1 tsp cinnamon
1 tsp vanilla
1/3 c chopped walnuts (optional)
1/3 c vegan chocolate chips (optional)

Preheat oven to 375 degrees F.

Mix non-dairy milk and lemon juice. Soak raisins in liquid.

Combine flours, salt, baking powder, and baking soda. Cut in cold Earth Balance buttery spread with a pastry blender (or your fingers!) until the mixture is mealy.

Add the oats, sugar, and cinnamon. I find at this point it is easiest to mix ingredients with my hands at this point.

Add the liquid, soaked raisins, and vanilla. Also add chopped walnuts and chocolate chips at this point, if using. Mix together to make a soft dough.

*Add a bit of water (or milk) if too dry; add some flour if too wet.

Knead lightly on a floured surface for a couple of minutes until the ball of dough hangs together well.

Divide dough into two parts. Form each part into 6 inch rounds and then slice each into six wedges. *I didn't do this. I just measured out about 1/8 c for each scone. That made 12 medium scones and then I made a bunch of mini-scones.

Ready to go in the oven!
Arrange on an ungreased cookie sheet and bake for 18 minutes (about 10-12 minutes for mini-scones) on middle rack, until lightly browned.

Slide onto rack to cool. Quite tasty while still warm with a pat of butter.
