Apple Bacon Quick Bread |
In thisgluten free apple bacon quick bread a little bacon goes a long way. Instead of using yeast, quick breads gettheir rise from baking powder or baking soda which eliminates the need for thedough to rise before baking. That makesthe bread making process a whole lot quicker ergo the namequick bread. The end result is a bread with a hint of sweetness from the apples and onions and flecksof salty smoky bacon to offset the sweetness. And the bread is not only great on its own; it also makes awesome sandwichesand French toast. And you can change upthe stir-ins to suit your tastes. Extra sharp grated cheddar is a nice addition to this particular recipe. But things like olives, sun dried tomatoes, roasted garlic and prosciutto are some other good choices to customize the quick bread.

Ingredients
- 4 slices of bacon chopped into smallpieces
- 1 medium apple, peeled and diced
- 1medium onion, peeled and diced
- 3 eggs
- 1/3 cup milk
- 7 oz low fat Greek yogurt
- ½ cup olive oil
- 2 cups gluten free Bisquick

Instructions
- Preheatthe oven to 400°F or (205 °C) and grease a 9 x 5 inch loaf pan,
- Ina medium sauté pan over a medium heat sauté the bacon until it just starts todevelop some color then drain the excess grease.
- Addthe apples and onions to the pan and sauté for 5 to 7 minutes until they’resoftened and begin to caramelize then remove the pan from the heat and set itaside to cool down as you mix the dough.
- Ina large bowl whisk together the eggs, milk, yogurt, and olive oil until wellcombined.
- Addthe Bisquick and mix until a soft dough forms. Add the apples onions and bacon and mix until they’re evenly dispersedthroughout the dough.
- Emptythe dough into the prepared pan and smooth out the top.
- Bakethe bread for 50-55 or until golden and a tooth pick inserted comes outclean.
- Letthe bread cool in the pan for 10 minutes before removing it onto a baking rackto cool completely before slicing and serving.
Notes: Aserrated knife works best to slice bread. If you’re not following a gluten free diet you can substitute the glutenfree Bisquick by stirring together: (2 cups flour, 1 tbsp baking powder, 1 tspbaking soda, 1 tsp salt)

I enjoyed two slices stuffed with honey roasted ham, sharp cheddar and apple slices then grilled to a golden perfection. I'm getting hungry just looking at this one again. So Yummy!
