Pressing Tofu

Pressing tofu makes it more compact and gives it a great texture.  I also find it marinates better once pressed.

This is how I press tofu.

 Use firm or extra-firm tofu.  Open and drain.

 Cut into desired shapes.  Place on large cutting board over double-layered towel. Cover with additional double-layer towel. Place cookie sheet or another cutting board on top and load up with heavy objects. Press for 30 minutes.  Peek-a-boo, I see tofu! All pressed.  Towels are soaked. Ready to marinate and bake or saute!
